The Menu — Spring Edition
Course 1 — Amuse-Bouche
Heirloom radish with cultured butter and smoked sea salt from the farm's own smokehouse.
Course 2 — Soup
Roasted celeriac velouté, crispy capers, chive oil and a drizzle of farm-pressed rapeseed.
Course 3 — Garden Salad
Shaved fennel, blood orange, toasted walnuts and aged goat curd from Oakhurst Dairy.
Course 4 — Fish
Pan-roasted halibut, pea purée, pickled cucumber ribbons and a saffron beurre blanc.
Course 5 — Main
Slow-braised short rib, potato fondant, wild mushroom jus and charred spring onion.
Course 6 — Dessert
Dark chocolate cremeux, hazelnut praline crumble, cherry sorbet and vanilla cream.
